Beginners Guide: Vitamin K
Vitamin K is a nutrient that is involved in many different processes in the body. It is important for blood clotting, bone health, and more. This vitamin can be found in leafy green vegetables, dairy products, and some meats and oils. It is also available as a supplement. Vitamin K can interact with certain medications, so it is important to speak with a healthcare provider before starting any supplementation.
What is Vitamin K?
Vitamin K is a nutrient that the body needs for blood clotting, bone health, and more. It is a fat soluble vitamin, which means it can be stored in the body for future use. Vitamin K is found in leafy green vegetables, dairy products, and some meats and oils. It is also available as a supplement.
Everyone needs vitamin K, but some people may need more than others. People at risk for vitamin K deficiency include those who have malabsorption disorders, liver disease, or certain genetic disorders. People taking certain medications may also be at risk for deficiency. Consult with a healthcare provider to see if you are at risk for deficiency or if you should be taking a supplement.
Two Types of Vitamin K
Vitamin K1: K1 is responsible for the transport of potassium ions across cell membranes. It helps maintain the balance of potassium levels in the body, which is important for nerve and muscle function. K1 also helps regulate blood pressure and heart rate.
Vitamin K2: Important for keeping bones healthy and strong. It helps the body to use calcium effectively, Vitamin K2 may also help protect against heart disease by preventing calcification of the arteries.
Food Sources
Broccoli
Broccoli is a nutrient-rich vegetable that is an excellent source of vitamin K. One cup of cooked broccoli contains over 100 micrograms of vitamin K, which is more than the recommended daily intake for adults. Broccoli is also a good source of vitamins A, C, and B6, as well as fiber and potassium.
Brussels Sprouts
Brussels sprouts are another nutrient-rich vegetable that is a great source of vitamin K. One cup of cooked Brussels sprouts contains almost 200 micrograms of vitamin K, which is more than the recommended daily intake for adults. Brussels sprouts are also a good source of vitamins C and A, as well as fiber and manganese.
Collard Greens
Collard greens are a leafy green vegetable that is an excellent source of vitamin K. One cup of cooked collard greens contains over 1000 micrograms of vitamin K, which is more than the recommended daily intake for adults. Collard greens are also a good source of vitamins A, C, and B6, as well as fiber and manganese.
Kale
Kale is a nutrient-rich leafy green vegetable that is an excellent source of vitamin K. One cup of cooked kale contains over 1000 micrograms of vitamin K, which is more than the recommended daily intake for adults. Kale is also a good source of vitamins A, C, and B6, as well as fiber and manganese.
Mustard Greens
Mustard greens are a leafy green vegetable that is an excellent source of vitamin K. One cup of cooked mustard greens contains over 400 micrograms of vitamin K, which is more than the recommended daily intake for adults. Deficiencies
Symptoms of vitamin k deficiency include easy bruising, bleeding gums, and nosebleeds. If left untreated, vitamin k deficiency can lead to serious health problems such as liver disease or cancer.

Treatment for vitamin k deficiency usually involves taking vitamin k supplements. You may also need to take other supplements or medications depending on the underlying cause of your deficiency.
